You guys, you want something super tasty and so easy to make? Here’s my favourite, Pesto-crusted Salmon. It takes about 5 minutes to prepare, 25 minutes to cook, and it’s healthy. What more could you ask for. For really cheap salmon fillets, go to Safeway. They have crazy deals on frozen salmon fillets (and if you live in the prairies like me, ALWAYS buy frozen … the “non-frozen” stuff has been previously frozen, then thawed, something you can do on your own that is much cheaper.)
Two cloves of garlic, minced
Three tbsp bread crumbs
Three tbsp sun-dried tomato pesto (any pesto can work, but I swear you try the sun-dried tomato stuff and you’ll never go back; it is so good)
One salmon fillet
Mix the garlic, bread crumbs and pesto together. You want a nicely consistent crust from this.
Take a salmon fillet and lay it out on a baking sheet. You can put a piece of parchment paper down before then; however, I found the skin sticks better on the baking sheet. So after baking I can slide a spatula between the meat and skin and lift off the stuff I actually want to eat. Downside: more scrubbing to get the baked-on skin off of your baking pan. It’s your choice, I leave it to you.
Cover the fillet in the crust, pressing it down so the meat of the fish is covered. It already looks good!
Set your oven to 350, and put in the fish for about 25 minutes, or until it’s cooked through.
